Ingredients
1 cup slow cooking large flakes oats
3 eggs
2 medium apples, washed, peeled and chopped into small cubes
2 teaspoons coconut sugar
Optional: ¼ cup walnuts, crushed
Preparation
1) Pre-heat the oven to 375° F
2) Carefully separate egg whites from egg yolks
3) Beat the egg whites in a food processor until thick froth forms, then carefully add egg yolks, one at a time, while continuing to beat the eggs
4) Crush the oats in a coffee grinder but NOT to a meal consistency: approximately 5 seconds
5) Add crushed oats and coconut sugar to the eggs and mix in a blender or a food processor, do not over-mix: the batter should be the consistency of sour cream, then transfer batter to a bowl
6) Mix in chopped apples with a spoon, and if desired, crushed walnuts
7) Pour the batter into the muffin tins lined with parchment paper
8) Bake for about 20min or until the color turns golden-brown, check for doneness with a toothpick
